Over the month we spoke with Luke Johnson, chairman of Patisserie Valerie, a fast-growing chain serving up delicious cakes and pastries. He’s committed to at least doubling its estate to 280 sites within seven years but most analysts expect a lot more, given its flexibility to open in various locations such as cafes, concessions, brasseries, motorway service stations and railways.
